Deana's Sinh Tố Bơ - Avocado Smoothie With Boba
Avocado is one of my favorite fruits! It’s a stone fruit full of nutrients and benefits one’s health. It has the capability of lowering cholesterol and benefiting the heart due its monounsaturated fatty acids. And although it may not seem like it, avocados are packed with fiber! I enjoy my avocados with a fried egg topped with salt, pepper and chili oils or in a beautifully rich smoothie. The thick and creamy consistency of avocados makes for dense and hearty smoothie. The fatty flavor is balanced by sweetened condensed milk and lightened by icy bits blended to perfection! Topped with some tapioca pearls and you’ve got a drink to satisfy any cravings on a hot summer day! I hope you enjoy this delicious treat as much as my family and I do!
Recipe Serves One
1 ripen avocado
¾ cup ice
⅓ cup milk/half and half
3 tbsp sweetened condensed milk
½ cooked tapioca pearls
Whip cream (optional)
Boba
1.5 cups dried boba
1 cup sugar
3 cups water

Method
Pre-make tapioca pearls. I cook 1.5 cups of the dried tapioca pearls. I buy the “5-minute” boba brand. However, I find that it takes way longer than 5-minutes to soften the pearls. Bring water to a boil and dissolve sugar. Add the dried tapioca in when pot boils again. Allow the liquid to come back to a boil and then lower heat to a low simmer. Cook pearls for 30-35 minutes and stir occasionally. Allow to cool completely.
In a blender add avocados, ice, milk or half and half, condensed milk and blend till smooth. More sweetener can be added if you prefer it a bit sweeter.
In a serving cup, add boba to the bottom and pour avocado shake on top. Garnish with a few boba pearls and whip cream. Enjoy with a boba straw!
