Salmon & Dill Sauce

Simple airfryer Salmon & Dill Sauce! Carrots, dill and beet leaves from my backyard garden! During the busy school year, I find it hard to cook daily. So I buy lots of goodies from Costco that can be prepared quickly and easily! I always have a supply of frozen salmon and the Calrose medium grain rice ready to go! Life is even easier with a variety of veggies directly sowed in my backyard garden. This is the simple life! ***Not sponsored by Costco.***




Recipe (Serves 4)

  • 4 salmon Steaks

  • 4 cups cooked rice (optional)

  • 1 lb of any hardy veggies (asparagus/ carrots/ zucchini, etc)

  • olive oil


Dry Seasoning for Fish & Veggies

  • 1tbsp salt

  • 1 tsp garlic powder

  • 1 tsp black pepper

  • 1 tsp paprika


Dill Dressing

  • 1/2 cup plain yogurt

  • 1/4 tsp salt

  • 1/4 tsp black

  • 1 tsp sugar

  • 1 tsp mustard

  • 1/4 cup minced Dill

  • 1 tbsp lemon juice

Method

  1. Cook rice if serving with a carbohydrate. No need to prepare rice if one is on a low carb diet.

  2. Mix dry seasoning together and sprinkle onto all sides of each salmon steak. Drizzle olive oil on both sides of the salmon. Do not use all the seasoning because it will be too salty. Airfry on 400°F for 10-minutes on top rack. Or pan fry on medium for 10-minutes. Fill half way through cooking.

  3. Mix ingredients for dill sauce and set aside.

  4. Drizzle olive oil onto veggies and lightly dust with dry seasoning mixture. Do not use all of the mixture because it will be too salty. Aryfry carrots at 400°F for 8-minutes on top rack. If using zucchini/ asparagus, airfry on 400°F for 5-minutes on the top rack.

  5. Plate everything and dress salmon with dill sauce, lemon slices and whole dill leaves.
