Antioxidant Rich & Immune Boosting
"Ginseng Chicken Soup", samgyetang (삼계탕), is full of nourishing elements. This soup is packed with nutrients and flavors from ginseng, jujube, goji berries, ginger, garlic and sweet rice. The sweet rice thickens the broth while the chicken adds a fatty richness. A good balance of sweetness, richness and bitterness.
To accompany the theme of this meal, side dishes include bitter melon with scrambled eggs and sauté pea shoots with beef. Rich in vitamins, antioxidants and fiber. Eat for our health! Bon Appétit!
Ingredients
1 Cornish Hen
1 Dry Ginseng Root Rehydrated or
4 Tbsp Ginseng Tea/Liquid
4 Tbsp Sweet Glutinous Rice
1 Tbsp Chicken Bouillon
1 Tsp Salt
1 Tsp Sugar
4 Garlic Cloves Smashed
1.5 Inch Long Ginger Root Halved
¼ to ½ Cup Jujube (Small) Rinsed
1 Tbsp Goji Berries Rinsed
1 Scallion Chopped Into 2-inch Pieces
5 Cups Water
Method
Place sweet rice in a microwave safe dish. Add water until it’s ½ inch higher than the rice. Microwave for 1.5 minutes. Stir sweet rice and set aside.
Grab a soup pot that will fit a cornish hen and 5 cups of water.
Wash the cornish hen and stuff her with 2 tbsp of the soaked sweet rice. Use a toothpick to secure the skin so that rice doesn’t fall out. Tie up the hen’s legs with some twine.
Add all remaining ingredients to the soup pot. Adding water last. If using ginseng liquid/tea, add that after the cooking is completed. Gently stir ingredients around the hen.
Bring the pot to a boil on medium-high heat. Reduce heat to a simmer and cover with lid slightly opened. Stir occasionally. Cook for 25-minutes.
Before serving, add fresh spring onions on top as a garnish! Bon Appétti!
