Bacon Kimchi Fried Rice

I love bacon and kimchi! Throw that into a classic fried rice combo and you get heavenly flavors in your mouth!!!

Bacon Kimchi fried rice is packed full of spicy savory flavors! If you love kimchi and bacon, this dish is a balance of rich salty bacon flavor and spicy kimchi. A bit of freshness is created by the addition of spring onions. And a nutty flavor can be achieved with toasted sesame seeds. It's a dish that I cannot stop munching on! Combine that with my Korean friend chicken, soju, K-Drama, and I have a satisfying evening of comfort food enjoyment!


Ingredients

  • 4 cups rice

  • 1 cup kimchi chopped

  • 8 bacon slices

  • 4 eggs scrambled

  • 2 tbsp olive oil

  • 2 tbsp Gochugaru (Korean red chili pepper flakes)

  • ¼ cup soy sauce

  • 2-3 garlic cloves minced

  • ½ red onion chopped

  • ½ cup green onions chopped

  • 1 tbsp sesame seeds (optional)

Method

  1. Add olive oil to a large frying pan/wok. Set heat to high. Once warmed up, add scrambled eggs. Reduce heat to medium-high. Once eggs are done cooking, remove from the pan and set aside.

  2. Slice bacon into ½-inch pieces. Add to the same frying pan/wok. Cook on medium high heat until color deepens. Approximately 6-8 minutes.

  3. Add chopped red onions and minced garlic into pan/wok. Cook for 3-5 minutes.

  4. Add rice, kimchi, and eggs into wok. Mix well and reduce heat to medium.

  5. Add soy sauce and gochugaru. Mix till everything is well incorporated.

  6. Turn off heat.

  7. Green onions and sesame seeds can be mixed in at this point or sprinkled on top!

  8. Enjoy!
